After eight years’ experience of working as a chef in Japan, Jesus chose to specialise in teppan, or rather, the Japanese grill cuisine. In his tiny restaurant, Rio, the star dishes are okonomiyaki (the famous Japanese pizza made from egg, noodles, cabbage and pork) and yakisoba (dry noodles), and which fight for space on the grill with local products such as red prawns, cuttlefish and razor clams. Also highly recommended are the miso soup, beef tataki and stuffed mushrooms.
