La Vaqueria, which opened 20 years ago, is indescribable and quite weird: The cattle trough still runs through the dining room. With its heavy, dark atmosphere, the restaurant resembles a film noir club. It would’ve been the perfect set for ‘Casablanca’ if Michael Curtiz had been a fan of cow motifs, which are everywhere. They make good, fresh market fare, with specialities such as bean and prawn salad with truffle vinaigrette, and cod with spinach sauce in puff pastry.
