Pabellón criollo is one of the best-known dishes in Venezuelan cuisine. While it varies according to the region, it usually consists of rice, chopped meat, black beans and fried slices of plantain. The different colours of the ingredients give the dish a striking appearance which immediately stimulates the appetite. The meat – preferably beef brisket – is boiled with salt and onions until it falls apart. It is then sautéed with garlic, onion and sweet pepper, and served with the other ingredients. This is one of the most popular dishes at La Orquídea, which also serves Mexican food.
