The Iborra family moved to Catalonia more than 50 years ago, bringing with them a suitcase full of contraband recipes. Pioneers in Barcelona in the import of Valencian cuisine, they have four restaurants where you can find all kinds of flawless rice dishes.
In the original restaurant in Av Paral·lel as well as in the others, their star dish is Elche's black rice with squid and artichokes, an explosion of dark and lustful sea flavours, with vegetables that your ancestors used to eat, cuts of cephalopod that you'll dream about and, the secret to their success, a rice base of Bayo Extra from the Ebro Delta, a hybrid between long-grain and bomba varieties that provides consistency and pleasure.
