In its first incarnation, El Tossal was the kind of restaurant that served excellent game stews made with ingredients from the owners’ hunter friends. This classic spot has changed hands and updated its image. Now they serve meat from the market, but they always have great wild boar civet and deer with an elderberry sauce that reduces the intensity of the meat’s flavour. And while it’s not game, they also serve a sweet, tender braised colt that will make the angels sing.
