The brilliant Finnish chef Jani Paasikoski (from Dos Cielos, Vía Véneto, Racó d’en Freixa, Bravo) has always been ambitious in his approach: his personal, creative cuisine is always trying to give a new twist to classic dishes, and most often he succeeds. Try his special esqueixada, his suckling pig with curry and pear, or his shrimp and mussel ravioli in a saffron sauce. Great innovative dishes.
