Dej Kewkacha, restauranteur and mastermind behind matcha soft-serve purveyor Kyo Roll En, has taken his dessert empire to a fancier level.
Dubbed Kyo Bar, the 13-seater café takes inspiration from the Japanese kaiseki (traditional multi-course dinner) and comes up with a dessert bar where chefs make the treats in front of you while explaining the stories behind each creation. The menu consists of three choices: ume (main and drinks, B300), take (starter and main, B350) or matsu (full-course, B400). The appetizer selection sees sweet treats imitating savory bites like custard-filled eggs, soba, and barbecue crab that promises to take you by surprises.
The bigger-portioned “mains” are creations that boast state-of-the-art presentation and components structured to deliver balanced yet complex flavors. Cacao Story depicts a bountiful “forest” made from assorted chocolate, of which the highlight lies in the soil layered with chocolate crumbs, brownies and chocolate sauce with a hint of miso, while Oops is illustrated as a spilled glass that plays with acidic and sweet flavors of yoghurt, strawberry and hibiscus. Zen Garden shines in its decadent creaminess, featuring a “stone” that is actually a cake made with Camembert and mascarpone.
