Highly-acclaimed chef, Tiago Bonito, of the one Michelin-starred Largo do Paço in Aramante, Portugal will be collaborating with Il Fumo’s Chef Nelson Amorim for an exclusive two-night dinner, as the ninth edition of "Portugal, The New Dawn" dinner series, on 29 and 30 October.

Hailed as a key player in progressive Portuguese fare, Chef Tiago has worked in some of the world’s most prestigious kitchens such as Alinea in Chicago and D.O.M. in Sao Paolo, both of which are three Michelin-starred restaurants. He returned to Portugal to work at the luxury resort, Vilalara Thalassa in Algave, and later became the executive chef at Largo do Paço in 2017.

Chef Tiago will be cooking alongside Il Fumo’s Chef Nelson for an exquisite seven-course dinner (B3,500) that reinterprets Portuguese delicacies such as bacalhau carpaccio with extra virgin olive oil ice-cream; quail served with seasonal vegetable roots; wagyu with black truffle and smoked celeriac; and chef Tiago's famous pastel de nata egg tart. Wine pairing by sommelier Thanakorn Mankit will complement the experience.
