Spirit Jim Thompson never disappoints us when it comes to modern re-appropriation of traditional Thai food—and this season is no exception. Spearheaded by Chef Montri Virojnvechapant, the elegant Chidlom Thai eatery has just introduced the new seasonal set menu that highlights kanom jeen, the Mon-originated rice noodles that Thais usually eat with various types of dressing/soup.
The Kanom Jeen Spirit Jim Thompson menu sees four rarely-seen Kanom Jeen dressing recipes: Kanom Jeen Sao Nam (rice noodles with coconut milk), Kanom Jeen Namprik (rice noodles with sweet-and-sour mung bean gravy), Kanom Jeen Kung Sod (rice noodles with prawn and spicy sauce) and Kanom Jeen Nam Ya Pu Pak Tai (rice noodles with spicy Southern-style crabmeat curry). The set ends with fluffy santol in syrup (Kra-ton Pui Fai Loy Kaew) and your choice of Jim Thompson signature herbal drinks.
Despite serving all at once, the set menu is best to enjoy in a suggested journey, kicking off with the refreshing Kanom Jeen Sao Nam to warm your palate with rice noodles in mild-flavored coconut milk sauce served with clown featherback fish balls, boiled egg and other condiments like sugar and fish sauce. Kanom Jeen Namprik is the dish to enjoy secondly. It comes with aromatic chili paste-based mung bean gravy mixed with sliced snake fruit, kaffir lime, fresh shrimp, and chili oil, and vegetables to balance the heat. You'll then move on to the third recipe, which is Kanom Jeen Kung Sod, a recipe with history dated back to the reign of King Rama V. It features types of peppers and chilies, shallots, grilled bite-sized nun shrimps, and clown featherback fish cakes, seasoned with lime juice and sugar in fish sauce. The fourth to savor is the flavorful spicy Southern curry served with a selection of seasonal vegetables. The set ends with fluffy santol in syrup (Kra-ton Pui Fai Loy Kaew) and your choice of Jim Thompson signature herbal drinks.
