Tooru Tanaka, the yakitori master who brought his hyped Shirokane Tori Tama in Tokyo to Park Lane Ekkamai, will be taking over the kitchen of Jua in Charoenkrung on 24 October.
Chef Tanaka is famous for perfecting his chicken skewers on bincho-tan charchoal grill. The yakitori specialist is also recognized for “beak-to-tail” approach by serving adventurous gourmands every part of the fowl including chicken oyster (sori), aorta (kokotonokori), hen’s tail (misaki), as well as the unlaid egg yolk (couchin).
