It’s a new reign at Le Normandie. Highly lauded British chef Alain Roux has commenced his duties at the Mandarin Oriental’s 63-year-old two-Michelin-starred French dining room. Alain Roux is the head chef of The Waterside Inn, the first restaurant in the UK to gain three Michelin stars. At Le Normandie, Roux wants to celebrate the glory of “classic” French cooking and focus on delivering authentic and well-balanced flavors. Word is spreading fast and tables are fully booked until March.
