In any list of influential British chefs, the name of Tim Spedding always makes the cut thanks to his culinary expertise and creativity bagged from some of the world’s best kitchens. This November, Bangkok diners can be delighted as the acclaimed young chef is set to visit Thailand at Royal Orchid Sheraton Hotel and Towers to showcase his culinary magic through the lavish four-course dinner on a cruise.
A progressive force in British gastronomic realm, Tim worked alongside the prestigious Isaac MacHale as sous-chef at The Clover Club, as well as having helmed the kitchen of The Ledbury in London (both are named the world’s 33rd and 42th best restaurants in 2018 respectively). The chef along with his partner Louise Roedkjer will be launching the restaurant of their own in a farmhouse in Cornwell, UK, specializing in farm-to-table concept.
On 2nd and 4th November, Tim will captivate Thai diners with a four-course delight fusing a touch of Thai ingredients on a river cruise that will sail along the Chao Phraya. After a series of pre-dinner canapes such as a bouquet of herbs and flowers, vegetable and mint tart and oyster with kaffir lime, expect the likes of smoked salmon tartare with sour cream and leaves, garden-picked vegetables with seaweed mustard and aromatic butter and honey-glazed duck with pumpkin, butter leaves, and devilled spices. The dinner ends on a high note with burnt mandarin granita and yogurt mousse.
