White truffle season has officially returned to Bangkok, and swanky riverside establishment Côte by Mauro Colagreco at Capella Bangkok is the first in the city to serve this precious diamond of an ingredient in an exquisite multi-course dinner.
Chef Davide Garavaglia once again proves his mastery of French cooking with a nine-course meal that highlights the fragrant tuber alongside other premium ingredients.
The dinner begins with an amuse bouche that consists of three different nibbles: a reimagined macaron, a leaf-like biscuit with chicken liver pâté, and a rice cracker with shredded mushroom.
An opener is served next: a socca crisp with fresh crab meat infused with truffle oil. It’s a brilliant preview of what’s to follow, which is scallop and foie gras elevated by Albufera sauce and white truffle.
The seafood theme is carried onto the next dishes, which include a gnocchi dish with sea urchin, smoked sturgeon with borlotti beans, lobster with yuzu and tapioca sauce, and a huge piece of monkfish with Jerusalem artichoke puree—each course generously topped with aromatic white truffle flakes.
The star of the evening is tender pheasant served with Champagne sauce and brussels sprouts, and of course, white truffle on top.
Even dessert is not spared from this pungent ingredient. The prized truffle is incorporated into two meal-enders: a refreshing scoop of yogurt and an egg-heavy soft meringue.
