Italian chef Nicola Russo, the spearhead of one Michelin-starred Tosca restaurant at The Ritz-Carlton in Hong Kong, is now making a brief visit at Jojo at St Regis Bangkok to deliver tantalizing Italian creations until 24 Feb.
The Pisa native has worked in noted international kitchens before landing his current position at Tosca which has received a Michelin star for two consecutive years. Chef Russo is praised for his innovative take on Italian staples that retain essential Italian flavor.
Until 24 Feb, chef Russo serves a four-course lunch (B2,100) and a six-course dinner (B2,950), as well as a number of à la carte dishes at Jojo. Expects simple-looking dishes yet boasting intricate details and impressive layering of flavors as in the “sea cappuccino” featuring a layering of sea urchin, prawn tartare and seawater mousse, served with caviar-topped cracker; and the delicate serving of seared Hokkaido scallops that blend beautifully with different variations of Jerusalem artichoke and black truffle. The creamy risotto comes out al dente with strong earthy note of mushroom.
Choice of mains include Mediterranean-caught sea bass cooked in celeriac shell, served with fried mussel and flavorful cacciucco sauce (Tuscan fish stew); and heavenly slightly-smoked beef tenderloin with eggplant puree, artichoke and anchovy mayo.
