The history of the hotel itself is one of evolution – it opened in 1983 as The Regent Bangkok, became the Four Seasons in 2003 and finally transformed into Anantara Siam Bangkok Hotel in 2015 – and that evolution continues at Biscotti as Chef Giuseppe Bonura opens a new chapter in the restaurant’s culinary story.
Born and raised in the historic city of Syracuse, Sicily, Bonura brings the flavours of his hometown to every dish, especially when it comes to fresh seafood and handmade pasta. This commitment to culinary authenticity is elevated with the chef’s creative touch and application of modern techniques.
Chef Bonura’s first love wasn’t food but music. A trained classical musician, he only discovered his passion for cooking after stepping into a professional kitchen. To Bonura, food and music share a rhythm and every dish he creates is like a symphony. As he puts it: ‘Cooking and music feel similar to me and I’ve always wanted to blend the two. Now, I’m creating a dining experience where each course is paired with a melody, setting the mood and enhancing the meal.’
In this new era for Biscotti you can expect the sun-kissed flavours of Sicily to shine in dishes such as panzanella alla siciliana (B590), a refreshing organic tomato salad with almond cream, pine nuts and balsamic red onion, and arancini (B980), delicious Sicilian-style croquettes stuffed with beef ragu and caciocavallo cheese and served with a spicy tomato sauce.
For mains, Bonura’s pan-fried sea bass (B1,100) is served with spelt, mussels, clams and artichoke, all soaked in a rich prawn bisque. For dessert, expect something simple and comforting, but naturally still indulgent. Mandarin cannolo (B300) comprising orange ricotta, mandarin compote, hazelnut ice cream and yoghurt ice cream is a fine example, but it’s hard to top the spectacularly zesty signature of amalfi lemon (B420) featuring ivory white chocolate mousse, confit amalfi lemons and a refreshing limoncello sorbet.

If you prefer something simple but still full of flavour, go for a pizza or pasta offering. The diavola pizza (B850) topped with spicy salami, taggiasca olives and mozzarella fior di latte is a piquant pleasure, but also consider a homemade pasta masterpiece such as beef agnolotti (B700 small, B950 large): pasta parcels stuffed with braised beef shank, spinach and parmesan cheese dressed in butter and black truffle.
