80/20 debuts a new head chef and a tasting menu to welcome back diners

Chef Andrew Martin’s culinary journey comes full circle with a return to his old home.

Conceptual fine-dining restaurant 80/20, always in pursuit of culinary excellence, has revealed a new tasting menu, created by its equally new (well, sort of) head chef Andrew Martin.

You can consider it a comeback for Andrew, who was one of the chefs to lead 80/20’s kitchen crew when it first opened in 2016. He later moved on, logging in some hours at Issaya Siamese Club and then Jaew Jim Thompson.

Now that he’s back at the one-Michelin-starred Charoenkrung restaurant, the Canadian chef is eager to serve discerning bon viveurs with an all-new tasting menu. Taking inspiration from his long culinary journey in Thailand and his many memories of the kingdom, he’s created a feast comprising several bite-sized courses, each one delightful in their own right.

Proudly presented are highlights like Stormy Sea (squid, mangosteen, chili), which recalls the chef’s squid-fishing trip in the south; Gai Krajan (chicken, sweet chili, cashew), a dish inspired by his visit to Kaeng Krachan National Park; and Issan Market (mushrooms, herbs, pickles), which portrays Andrew’s first impressions of a local market in Thailand. He’s also come up with creative sweet treats to wrap up the meal, including Suan Maprow (coconut, guava, honey) and a mysterious set called Petit Fours - Black, White, Gold.

80/20 and Chef Andrew are all set to welcome back Bangkok’s gastrophiles from Wednesday to Sunday, 17:30 to 22:00. The Experience Tasting Menu (comprising 14 courses) is priced at B2,800++ per person, and The Signature Tasting Menu (comprising 18 courses) is at B3,300++ per person.
