The cuisine tweaks French fare with Asian inflections. Get the best of both worlds with grosses crevettes and foie gras poêlé, vermicelle chinoise (large prawn, foie gras and Chinese noodles, B270), an unforgettable dish that’s big enough to share. If you want a dish all to yourself, try the Noix de St Jacques en papillote de risotto, emulsion au parmesan (poached scallops risotto in parmesan sauce, B300), or melon rôti, filet de caille en feuille de choux chinois et jambon de Serrano (quail with Chinese cabbage and parma ham, B260). Dessert is definitely a must; the chef recommends the tarte au citron déstructuré (deconstructed lemon tart, B240).
