Big news: Josh Niland is set to open a stunning waterfront restaurant on Hamilton Island next year

Culinary couple, Josh and Julie Niland, will take over culinary direction at The Sundays, a luxury hotel opening in 2025

The king of the sea is making waves again. Just months after relaunching Saint Peter in Paddington’s Grand National Hotel, the ‘fish butcher’ has revealed that he and his wife, Julie Niland, will be opening a brand-new restaurant at The Sundays – a luxury boutique hotel launching on Hamilton Island in 2025.

Niland’s trailblazing nose-to-tail approach to cooking has won him just about every major culinary award in the country – and the world, for that matter – including the honour of being the only Australian restaurant to crack the World’s 50 Best longlist for 2024. With Saint Peter 2.0 up and running, the long-standing Fish Butchery thriving, their 2023 opening Petermen booking out nightly, and a new restaurant in Singapore under their belt, the Nilands are proving they’re unstoppable.

In April 2025, the power couple will bring their game-changing, zero-waste seafood philosophy to new shores, with the opening of a new dining experience at The Sundays. Located at the northern end of the palm-fringed Catseye Beach on Hamilton Island, this family-friendly beach resort is set to be one of Australia’s hottest hotel openings next year. With a $30-million price tag and backed by the visionary creators of Qualia, it’s set to bring a new level of luxury to the island.

“Julie and I fell in love with the entire vision behind The Sundays,” says Josh Niland. “It reflects so much of what we value – bringing people together to create memories in beautiful surroundings. We can’t wait to introduce a dining experience that feels connected to the island and its incredible natural environment.”

Building on the success of his award-winning restaurants, the new venue will embrace Niland’s signature whole-fish ethos, while offering a premium selection of land-based proteins and fresh produce from the Queensland coast. The father of four will also design dishes to cater for the whole family, celebrating the cherished Australian tradition of sharing meals by the sea.
