The Eve Hotel Sydney, NSW
Opening: February 13, 2025
Next month, the Harbour City's hotel landscape will get even more luxurious, with a stunning boutique hotel from the group behind Brisbane's The Calile opening in Sydney’s trendy new Wunderlich Village lifestyle precinct. The Eve will seamlessly blend the glamour and grunge that Redfern is known for, featuring 102 boutique rooms, a rooftop deck with a 20-metre pool, lush greenery and a European-style lobby bar. Guests will also be within walking distance of some of Sydney’s best new dining venues, including Olympus, a bustling Greek taverna, and Island Radio, a high-energy Southeast Asian eatery.
Mondrian Gold Coast, QLD
Opening: First half of 2025
Arguably the Gold Coast’s most luxurious hotel to date, this 24-storey coastal-luxe beach house will mark the Australian debut of LA’s innovative Mondrian group. The five-star hotel will sit mere metres from Queensland’s pine tree-framed Burleigh Beach, with 208 studios, suites and homes boasting breathtaking views across the Pacific Ocean and out to the Hinterlands. While the finer details remain under wraps, guests can expect sparkling pools, a chic terrace eatery, an oceanfront restaurant and pool club, plus a wellness space and spa.
The Lodge Wadjemup, Rottnest Island, WA
Opening: March 2025
Trust us, once you set foot on Rottnest Island, you'll find it hard to leave – so do yourself a favour and book at least a night or two at the newly refurbished $25 million Lodge Wadjemup. Located just behind the main settlement, the first stage of the hotel will feature new island-inspired Courtyard and Lake Rooms, a Mediterranean-style eatery and a laid-back kiosk for casual bites. Bookings are now open ahead of The Lodge’s March opening, while guests will have to wait until mid-2025, for the Poolhouse Rooms, pool and function rooms to open.
The Sundays, The Whitsundays, QLD
Opening: Autumn, 2025
The $30 million price tag is just a hint of what to expect at this family-friendly beach resort by the team behind The Whitsundays’ most iconic luxury resort, Qualia. Sitting pretty at the northern end of the palm-fringed Catseye Beach on Hamilton Island, The Sundays will boast 59 breezy rooms overlooking the bright blue Coral Sea or calming hotel gardens. Along with a beachside pool featuring private cabanas and tropical gardens, the boutique hotel will feature a water’s edge seafood restaurant helmed by celebrated chef Josh Niland of Saint Peter.
Levantine Hill Hotel, Yarra Valley, VIC
Opening: June, 2025
Victoria’s renowned Yarra Valley wine region will score its first suite-only luxury hotel, with an ultra-bougie $20 million development set to open in mid-2025. Designed to blend naturally with the Yarra Valley’s gorgeous landscape and complement Levantine Hill’s existing winery, this boutique hotel will offer 33 suites overlooking the vineyards or mountains. Guests can also enjoy complimentary breakfast, indoor and outdoor exercise facilities, a sculpture walk and tastings of Levantine’s award-winning wines.
