To anyone outside of Texas, the word "kolaches" usually elicits puzzled looks and vacant stares. But to those who grew up on the Czech pastries, it's a beloved treat that conjures memories of pillowy dough filled with fruit preserves, jams or farmer's cheeses (later on, the dough was stuffed with meat and cheese, and the pastry was dubbed a klobasniky). Now the kolache is reemerging in modern-day shops, like the new Batch Craft Beer & Kolaches which opened its doors today.
Brothers Noah and Josh Lit opened Batch with pastry chef Jasmine Jones at the helm, where she's making the dough with King Arthur Flour, organic sugar and local honey, and using fillings that include Micklethwait Craft Meats brisket and sausage, as well as seasonal fruit fillings. Some other kolaches to expect: Chocolate Caramel Pecan; Micklethwait's Brisket, Swiss & Pickle; and Jalapeño & Cheese.
Batch is also a taproom and bottle shop, and you'll be able to mix-and-match from over 400 bottles and cans plus 12 beers on tap, including Prairie Artisan Ales. Stopping by in the morning? There's coffee, too, from Dripping Springs-based Greater Goods Roasting. Why yes, we will take an espresso and a lemon curd kolache.
Batch is open at 3220 Manor Road on Mon-Fri 7am-11pm; Sat 9am-midnight; Sun 9am-10pm.
