Pull up a chair, share a meal and make new friends along the way. As part of Singapore Food Festival 2018, Time Out Singapore and Folklore present the Balik Kampong Heritage Dinner on July 26 and 27, a return to the old days of communal dining, stiff drinks and plenty of laughter.
The chefs
The Time Out Singapore Balik Kampong Heritage Dinner sees chefs Damian D'Silva (MasterChef Singapore 2018 judge) of Folklore, Han Li Guang of Michelin-starred Labyrinth, Haikal Johari of Michelin-starred Alma by Juan Amador and Pang Kok Keong of Antoinette present a seven-course dinner (including drinks) that highlights Eurasian, Peranakan, Malay and Chinese culture.
The menu
Treat yourself to seven-course meal created especially for this two-night event, including the chefs' reinterpretation of beef rendang, a parmentier of meat, yams and sweet potatoes. Chef Han is preparing a charcoal-grilled whole fish otah that's perfect for sharing while chef Pang is serving Hakka abacus seeds tossed in a foie gras sauce. Spicing things up, chef Haikal is plating up a hearty portion of lamb gulai and sweetbreads and chef Damian's main course of nasi tekan (compressed rice) with garam assam (spicy and sour fish curry) and sambal belimbing makes sure everyone leaves the dinner stuffed and satisfied.
Each dish is paired with four different bespoke cocktails featuring Havana Club rum, Monkey47 gin, Altos tequila and Jameson Irish whiskey expertly prepared by award-winning bar, Native, with local ingredients to match the flavour profiles of the dishes.
