Hong Kong-based chef Russell Doctrove (Maximal Concepts, Hong Kong) partners with Kilo Kitchen's chef Manel Valero to turn out a seven-course menu ($70) with dishes adapted from Doctrove's genre-bending Fish & Meat restaurant in Hong Kong. The shared plates turned out by Valero and the ex-Restaurant Gordon Ramsay cook include marinated tuna with compressed watermelons, sea urchin and fresh squid ink linguine and pineapple-glazed lamb shoulder. After service, the pair ascends upstairs to Kilo Lounge to dish out tunes for their Cooking Beat DJ set.
