From this top-floor modern space furnished with thin, light-wooded tabletops, you can see the Istana, Shenton Way and Marina Bay. Chef-owner Yoshihiko Koezuka’s seasonal leanings make his already interesting omakase kaiseki meals even more so: they’re usually nine-course affairs that highlight the fresh fish flown in from all over the globe (Japan and Australia in particular). The kinki nitsuke (simmered kinki fish) is a signature, a perfect example of his traditional cooking style. Unless you’re happy to sit at the bar, make reservations – even the Emperor and Empress of Japan had to. Well, technically speaking, of course.
