Come September 3, Ravi DeRossi—the empire builder behind Death & Company, Gin Palace and Amor y Amargo—will band together with Interpol guitarist Daniel Kessler for this raw fish-bar haunt in Carroll Gardens. The nightlife guru has tapped Top Chef alum Andrew D'Ambrosi (Le Cirque) to helm the menu of crudos, carpaccios and tartares at the rustic, wood-laden spot. On offer are tuna pica with black currant and toasted almond; local fluke with smoked ramps, green tomato and white soy; and hamachi with red onion, avocado and yuzu kosho (chili-pepper-yuzu paste). At the 12-seat butcher-block bar overlooking the open kitchen, bartenders serve quaffs to complement the fish: The Day-Boat Cobbler (sherry, white rum, cane syrup, orange juice and salt) is best enjoyed with the hamachi, while the Agave Orchard (tequila, apple brandy, Cocchi Americano and celery bitters) pairs well with fluke.
