Bone broth's status as the It soup of the season just got a boost. There's already Brodo, the takeout window ladling out steaming cups of broth at the back of Marco Canora's East Village restaurant Hearth, and now New York is getting Indie Fresh, a broth-and-soup pop-up operating out of Gotham West Market's Choza Taqueria stand. (Indie Fresh will soon get their own permanent space in the market once construction wraps up.)

Similarly to Brodo, which offers three varieties of bone broth (ginger-beef, organic chicken and a turkey-beef-chicken house stock), the GWM stall will dole out glass mason jars brimming with ginger-chicken ($9), pho beef ($9) and smoked-vegetable broths ($6), but will also expand with soups (bison borscht, broccoli-coconut-hemp curry) and "mashes" like turkey meatballs with cremini-mushroom sauce and red quinoa.
